Grilled Beef Chimichangas

Hotwife Davie

These Grilled Beef Chimichangas are a tasty take on traditional chimichangas. They are filled with seasoned grilled beef, a cheese- and vegetable-packed mixture, and are then grilled until they are just right. Adding smoke from the grill to this traditional Tex-Mex dish gives it a new flavor.

Ingredients:

  • 1 lb beef sirloin, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Cooking spray

Instructions:

Preheat the grill to medium-high heat

In a bowl, combine sliced beef, olive oil, minced garlic, ground cumin, chili powder, salt, and pepper

Toss to coat the beef evenly

Grill the seasoned beef slices until cooked to your liking, usually 3-4 minutes per side

Remove from the grill and let it rest for a few minutes before slicing it into smaller pieces

In a separate bowl, mix together shredded cheddar cheese, black beans, corn, diced tomatoes, chopped cilantro, and diced red onion

Warm the flour tortillas on the grill for about 30 seconds on each side

Divide the grilled beef slices and the cheese mixture evenly among the tortillas

Fold the sides of each tortilla towards the center and then roll them up tightly to form chimichangas

Spray the chimichangas with cooking spray and place them back on the grill

Grill for 2-3 minutes per side or until they are golden brown and crispy

Remove from the grill and let them cool slightly before serving

Serve with your favorite salsa, guacamole, or sour cream

Enjoy your delicious Grilled Beef Chimichangas
