Vegan Pear Custard Tart Pie

This vegan take on a traditional Mauritian dessert has flaky crust, ripe pears that are sweet, and a creamy coconut custard. It is a tasty treat that is great for any event.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter, chilled and cubed
  • 4-5 tablespoons ice water
  • 4 ripe pears, peeled, cored, and sliced
  • 1 cup coconut cream
  • 1/2 cup almond milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions:

Warm the oven up to 190C 375F

Pulse flour and vegan butter together in a food processor until the mixture looks like coarse crumbs

Add ice water little by little and pulse until dough forms

Put the dough in the fridge for 30 minutes after wrapping it in plastic wrap

On a floured surface, roll out the dough

Then, put it in a greased tart pan and cut off any extra

Put sliced pears in the tart shell

Sugar, cornstarch, vanilla extract, cinnamon, nutmeg, and salt should all be mixed together in a bowl with a whisk until the mixture is smooth

Cover the pears with the custard mix

At this point, the crust should be golden brown and the custard should be set

Let the tart cool down before cutting it up and serving it
