Parmesan Garlic Spaghetti Squash

This Parmesan Garlic Spaghetti Squash recipe is a tasty and filling Paleo substitute for traditional spaghetti. For a filling and healthy supper, the spaghetti squash strands are combined with a tasty olive oil sauce infused with garlic and topped with a paleo-friendly parmesan cheese substitute.

Ingredients:

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated paleo-friendly parmesan cheese substitute
  • Salt and black pepper, to taste

Instructions:

Preheat oven to 400F 200C

Cut the spaghetti squash in half lengthwise and scoop out the seeds

Drizzle olive oil over the cut sides of the squash and sprinkle with salt and pepper

Place the squash halves, cut side down, on a baking sheet lined with parchment paper

Bake for 30-40 minutes, or until the squash is tender and easily pierced with a fork

Remove from the oven and let it cool slightly

Using a fork, scrape the flesh of the squash into spaghetti-like strands and transfer to a serving bowl

In a skillet, heat olive oil over medium heat

Add minced garlic and saut for 1-2 minutes until fragrant

Pour the garlic mixture over the spaghetti squash strands

Add chopped parsley and grated paleo-friendly parmesan cheese substitute

Toss everything together until well combined

Season with additional salt and pepper if needed

Serve immediately and enjoy
