Southern Potato Salad
Southern Potato Salad is a classic side dish that goes well with barbecues, picnics, and family get-togethers. It tastes great and is creamy and tangy at the same time.
Ingredients:
- 4 cups diced potatoes
- 2 hard-boiled eggs, chopped
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1/4 cup chopped sweet pickles
- 1/4 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon white vinegar
- Salt and pepper to taste
- Paprika for garnish
Instructions:
Boil the diced potatoes in salted water until tender, approximately 10-15 minutes
Drain and let cool
In a large bowl, combine the cooled potatoes, chopped eggs, celery, onion, and sweet pickles
In a separate bowl, mix together mayonnaise, mustard, white vinegar, salt, and pepper
Pour the mayonnaise mixture over the potato mixture and gently stir to combine
Cover and refrigerate the potato salad for at least 2 hours to allow the flavors to meld
Before serving, garnish with paprika for color and extra flavor
