Mexican Sweet Potato Chicken Poppers
These Mexican Sweet Potato Chicken Poppers are packed with flavor and perfect for a paleo, Whole30, or AIP-friendly meal. Theyre easy to make and great for meal prep or as a party appetizer.
Ingredients:
- 1 lb ground chicken
- 1 cup grated sweet potato
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper omit for AIP
- 1 tbsp avocado oil
Instructions:
Warm the oven up to 400F 200C and put parchment paper on a baking sheet
Grate sweet potato, add ground chicken, cilantro, garlic, chili powder, cumin, paprika, onion powder, sea salt, and black pepper if using to a large bowl
Mix everything together well
Take about 1 tablespoon of the mixture and use it to make small poppers
Place them on the baking sheet that has been prepared
The poppers should be brushed with avocado oil
After the oven is hot, bake for 20 to 25 minutes, or until golden brown and cooked all the way through
Enjoy while hot
