Healthier Homemade Pop Tarts
Ingredients:
- For the pastry:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or preferred sweetener
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- For the filling:
- 1/2 cup sugar-free jam or preserves
- For the glaze optional:
- 1/4 cup powdered erythritol or preferred powdered sweetener
- 1-2 tablespoons unsweetened almond milk
- 1/4 teaspoon vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a food processor, combine almond flour, coconut flour, erythritol, and salt
Pulse to mix
Add cold cubed butter to the flour mixture and pulse until it resembles coarse crumbs
Add egg and vanilla extract to the mixture and pulse until a dough forms
Transfer the dough to a floured surface and roll it out to about 1/8 inch thickness
Cut the dough into rectangles, about 3x4 inches each
Place half of the rectangles onto the prepared baking sheet
Spoon about 1 tablespoon of sugar-free jam or preserves onto each rectangle on the baking sheet
Top with the remaining rectangles and seal the edges with a fork
Bake in the preheated oven for 12-15 minutes, or until the pop tarts are golden brown
Remove from the oven and let cool completely on the baking sheet
If desired, prepare the glaze by whisking together powdered erythritol, almond milk, and vanilla extract until smooth
Drizzle the glaze over the cooled pop tarts
Serve and enjoy these healthier homemade pop tarts, sugar-free and gluten-free
