Frosted Eggnog Cookies

These Frosted Eggnog Cookies are a delightful holiday treat with the flavors of eggnog and warm spices. The soft and chewy cookies are topped with a creamy eggnog frosting and a sprinkle of nutmeg, making them perfect for festive gatherings or as a sweet gift for loved ones.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 1/4 cups granulated sugar
  • 3/4 cup unsalted butter, softened
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
  • 1/2 teaspoon rum extract optional
  • For the frosting:
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup eggnog
  • 1/2 teaspoon vanilla extract
  • Ground nutmeg for sprinkling

Instructions:

Preheat the oven to 350F 175C

Line baking sheets with parchment paper

In a medium bowl, whisk together the flour, baking powder, nutmeg, and cinnamon

Set aside

In a large bowl, cream together the granulated sugar and softened butter until light and fluffy

Add the eggnog, vanilla extract, egg yolks, and rum extract if using to the sugar-butter mixture

Beat until well combined

Gradually add the dry ingredient mixture to the wet mixture

Mix until just combined

Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie

Bake for 10-12 minutes or until the edges are lightly golden

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes

Transfer the cookies to wire racks to cool completely

For the frosting, in a medium bowl, whisk together powdered sugar, softened butter, eggnog, and vanilla extract until smooth

Spread the frosting on top of each cooled cookie and sprinkle with ground nutmeg

Let the frosting set before serving or storing the cookies
