Enjoy a healthier version of fried rice using your air fryer This faux fried rice is made with cauliflower rice and loaded with colorful vegetables, eggs, and savory flavors. Its a low-carb and delicious alternative to traditional fried rice.

Ingredients:

  • 2 cups cooked cauliflower rice
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your air fryer to 375F 190C

Spray the air fryer basket with cooking spray to prevent sticking

In a large bowl, combine the cauliflower rice, carrots, peas, bell peppers, and onions

In a small bowl, mix together the soy sauce, sesame oil, minced garlic, and ground ginger

Pour the sauce mixture over the cauliflower rice and vegetable mixture

Toss to coat evenly

Pour the coated mixture into the preheated air fryer basket

Cook for 8-10 minutes, stirring halfway through, until the vegetables are tender and slightly crispy

Push the rice mixture to one side of the air fryer basket and add the beaten eggs to the other side

Cook for an additional 2-3 minutes, stirring the eggs occasionally until they are scrambled and cooked through

Combine the scrambled eggs with the vegetable rice mixture in the air fryer basket

Season with salt and pepper to taste

Cook for an additional 2 minutes to heat everything through

Serve hot and garnish with your favorite herbs or additional soy sauce if desired
