Cumin Lamb Noodles
Ingredients:
- 8 oz 225g dried wheat noodles
- 1 lb 450g ground lamb
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 teaspoons ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili flakes adjust to taste
- 1/2 cup diced bell pepper
- 1/2 cup diced red onion
- 1/2 cup chopped scallions
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
Cook the noodles according to package instructions
Drain and set aside
Heat 1 tablespoon of vegetable oil in a large skillet over high heat
Add the ground lamb and cook until browned and crispy, breaking it apart with a spatula as it cooks
Remove the lamb from the skillet and set it aside
In the same skillet, add another tablespoon of vegetable oil if needed
Add minced garlic and ginger, and saut for about 30 seconds until fragrant
Add ground cumin, ground coriander, and chili flakes to the skillet
Stir-fry for about 1 minute until the spices are aromatic
Add diced bell pepper and red onion to the skillet
Stir-fry for 2-3 minutes until they start to soften
Return the cooked lamb to the skillet
Add chopped scallions, soy sauce, dark soy sauce, and sugar
Stir-fry for another 2-3 minutes until everything is well combined and heated through
Taste and adjust the seasoning with salt and pepper as needed
Divide the cooked noodles between serving plates
Top with the cumin lamb mixture
Garnish with fresh cilantro leaves and serve hot
