Crockpot Chicken Taco Soup
This Crockpot Chicken Taco Soup is a hearty and flavorful meal perfect for busy days. Just toss all the ingredients into the slow cooker and let it simmer until dinner time.
Ingredients:
- 1 lb chicken breasts, boneless and skinless
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 can 15 oz corn kernels, drained
- 1 onion, diced
- 1 bell pepper, diced
- 1 packet taco seasoning
- 2 cups chicken broth
- 1 cup salsa
- Optional toppings: shredded cheese, sour cream, cilantro, avocado slices
Instructions:
Place chicken breasts at the bottom of the slow cooker
Add black beans, diced tomatoes, corn kernels, diced onion, diced bell pepper, and taco seasoning over the chicken
Pour chicken broth and salsa over the ingredients in the slow cooker
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender
Once chicken is cooked, shred it using two forks
Stir the shredded chicken back into the soup mixture
Serve hot, optionally topped with shredded cheese, sour cream, cilantro, and avocado slices
