Black Bean Quinoa Bowl with Cilantro Honey Lime Vinaigrette
A colorful and healthy vegan bowl with quinoa and black beans that are high in protein and a zesty cilantro honey lime vinaigrette on top. Not only does this dish taste great, but its also quick and easy to make, which makes it great for a tasty weeknight meal or lunch.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can 15 oz black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup for vegan option
- Salt and pepper to taste
Instructions:
Bring water to a boil in a medium-sized pot
Turn down the heat, add the quinoa, cover, and simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed
The vinaigrette is made by whisking lime juice, honey, olive oil, salt, and pepper together in a small bowl
Put cooked quinoa, black beans, cherry tomatoes, avocado slices, red onion, and cilantro in a large bowl
The vinaigrette should be poured over the quinoa mixture, and it should be gently mixed to cover everything
Put the mixture into bowls for serving, and if you want, top with more cilantro
Serve right away and enjoy
