Vegan Cherry Cookies with Cherry Icing

These vegan cherry cookies are soft, chewy, and bursting with cherry flavor. The cherry icing adds an extra layer of sweetness and a pop of color, making them irresistible treats for any occasion.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup vegan margarine, softened
  • 1/4 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dried cherries, chopped
  • 1/4 cup cherry preserves or jam
  • 1/2 cup powdered sugar for icing
  • 1-2 tablespoons cherry juice for icing

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Softened vegan margarine, granulated sugar, and powdered sugar should all be mixed together well in a mixing bowl

Mix in the vanilla extract until its fully mixed in

Slowly add the flour and mix it in until a dough forms

Do not mix in the chopped dried cherries

Make little balls out of the dough and put them on the baking sheet that has been turned over

Use the back of a fork to lightly press down on each ball to make it a little flatter

For 10 to 12 minutes, or until the edges are just beginning to turn golden

Take it out of the oven and let it cool for 5 minutes on the baking sheet

Then, move it to a wire rack to finish cooling

After the cookies have cooled, put a little cherry preserves or jam on top of each one

To make the icing, mix powdered sugar and cherry juice in a small bowl with a whisk

Spread icing on top of the cookies

Let the frosting harden before you serve it
