Red Quinoa with Raisins and Pecans

This red quinoa dish is tasty and good for you. The raisins and pecans give it a sweet chewy texture. This tasty recipe is simple to make and goes well with a light main course or as a side dish.

Ingredients:

  • 1 cup red quinoa
  • 2 cups water
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

Rinse the red quinoa under cold water

In a medium saucepan, combine quinoa and water

Bring to a boil

Reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and water is absorbed

In a separate pan, toast the chopped pecans over medium heat until fragrant

Set aside

In the same pan, heat olive oil

Add raisins and saut until they plump up

Once the quinoa is cooked, fluff it with a fork and transfer to a serving bowl

Mix in the sauted raisins and toasted pecans

Season with salt and pepper to taste

Serve warm and enjoy
