Quinoa and Kale Winter Salad

A hearty and nutritious winter salad featuring quinoa, kale, and vibrant vegetables, tossed in a flavorful balsamic Dijon dressing.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 bunch kale, stems removed and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts

Instructions:

In a saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed

Fluff with a fork and let it cool

In a large bowl, massage kale with olive oil for a few minutes until it becomes tender and bright green

Add cooked quinoa, cherry tomatoes, red onion, and feta cheese to the bowl with kale

In a small bowl, whisk together balsamic vinegar, Dijon mustard, salt, and pepper

Pour the dressing over the salad and toss to combine

Top the salad with toasted pine nuts before serving

Serve chilled and enjoy
