Chinese Cashew Chicken
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup cashews, toasted
- 1 bell pepper, diced
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup chicken broth
- Salt and pepper, to taste
- Cooking oil
Instructions:
In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, cornstarch, and chicken broth
Set aside
Heat cooking oil in a large skillet over medium-high heat
Add chicken pieces and cook until browned and cooked through, about 5-6 minutes
Remove from skillet and set aside
In the same skillet, add a bit more oil if needed
Stir in garlic and ginger, cook until fragrant
Add bell pepper and cook until slightly softened
Return cooked chicken to the skillet
Pour the sauce over the chicken and vegetables, stirring to coat evenly
Cook for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables
Stir in toasted cashews and green onions
Cook for an additional minute
Season with salt and pepper to taste
Serve hot on a white plate, garnished with extra green onions if desired
