Spicy Thai Chicken Soup

Ingredients:
- 1 lb boneless, skinless chicken breast, thinly sliced
- 4 cups chicken broth
- 1 can 14 oz coconut milk
- 2 stalks lemongrass, bruised and chopped
- 3 kaffir lime leaves
- 1 thumb-sized piece of ginger, sliced
- 3 cloves garlic, minced
- 1 red chili, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- Fresh cilantro leaves for garnish
- Sliced green onions for garnish
Instructions:
Lemongrass, kaffir lime leaves, ginger, garlic, and chicken broth should all be put in a pot together
Over medium-low heat, bring to a boil
Put in the pot the sliced chicken, mushrooms, and red chili
Make sure the chicken is fully cooked
Soy sauce, brown sugar, lime juice, and fish sauce should all be mixed in
Simmer for five more minutes to let the flavors mix
Take the lime leaves and lemongrass out of the soup
Add fresh cilantro leaves and sliced green onions on top while the food is still hot
