Pomodoro Fresco Pasta Salad
A tasty and refreshing dish called Pomodoro Fresco Pasta Salad has a zesty garlic balsamic dressing that goes well with cherry tomatoes, fresh mozzarella, basil, and mozzarella. Its a great thing to bring to a picnic or other summer event.
Ingredients:
- 8 oz penne pasta
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil leaves, torn
- 2 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and black pepper to taste
Instructions:
Cook the penne pasta according to package instructions until al dente
Drain and rinse with cold water
In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and torn basil leaves
In a small bowl, whisk together the minced garlic, extra-virgin olive oil, balsamic vinegar, salt, and black pepper
