Mint Chocolate Chip Meringue Cookies
Ingredients:
- 4 large egg whites
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon peppermint extract
- A few drops of green food coloring
- 3/4 cup mini chocolate chips
Instructions:
Warm the oven up to 200F 95C and put parchment paper on baking sheets
Beat the egg whites on medium speed in a clean, dry bowl until they foam up
Keep beating after adding the cream of tartar until soft peaks form
Slowly add the sugar while beating on medium-high speed until stiff, shiny peaks form
Mix the peppermint extract and green food coloring in slowly
Be careful as you add the mini chocolate chips
Drop dollops of the meringue mixture onto the baking sheets that have been prepared
You can use a piping bag or two spoons for this
Set the oven to 350F and bake the cookies for 1 to 2 hours, or until they feel dry and firm
Turn off the oven and let the cookies cool all the way down inside
After the cookies have cooled, put them in a container that wont let air in
This will keep them crisp
