Keto Avocado Chicken Salad
For lunch on the keto diet, this Keto Avocado Chicken Salad is a cool and filling choice. Its quick and easy to make, and its full of protein and good fats.
Ingredients:
- 2 cups cooked chicken, shredded
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, diced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons mayonnaise
- Salt and pepper to taste
Instructions:
Put the diced avocado, red onion, celery, cilantro, and shredded chicken in a large bowl
Put mayonnaise and lime juice in a small bowl and mix them together
Add the lime-mayo mix to the chicken and avocado mix, and gently toss to coat
Add pepper and salt to taste
