Cauliflower Spinach Soup

A wholesome and flavorful soup combining the goodness of cauliflower and spinach, enriched with aromatic spices. This soup is not only delicious but also packed with nutrients, making it a perfect choice for a nourishing meal.

Ingredients:

  • 1 medium cauliflower, chopped
  • 4 cups fresh spinach, washed and chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Put in the minced garlic and diced onion and saut until the onion is soft

Salt and pepper should be added along with the chopped cauliflower

Bring it to a boil

Add the vegetable broth and bring it to a boil

Then lower the heat and let it simmer for 15 minutes, or until the cauliflower is soft

Add the coconut milk and chopped spinach

Keep cooking for five more minutes or until the spinach wilts

Blend the soup until its smooth with an immersion blender

You could also move the food to a blender in batches and then put it back in the pot

If you need to, change the seasonings and serve hot

Put some fresh ground pepper on top and drizzle with coconut milk
