Quick Chicken Avocado Roll-ups
For a light lunch or snack, these chicken avocado roll-ups are quick and tasty. Theyre easy to make and only take 10 minutes. Theyre full of protein and healthy fats and make you feel full.
Ingredients:
- 2 large flour tortillas
- 1 cup shredded cooked chicken
- 1 ripe avocado, sliced
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions:
In a small bowl, mix together mayonnaise and Dijon mustard
Lay out the tortillas and spread the mayonnaise mixture evenly over each one
Layer shredded chicken, avocado slices, lettuce, and diced tomatoes evenly over the tortillas
Season with salt and pepper to taste
Roll up the tortillas tightly and slice each roll-up into bite-sized pieces
Serve immediately or refrigerate for later
