This Slow Cooker Balsamic Chicken with Carrots recipe is a delicious and easy way to prepare a hearty meal with minimal effort. The combination of balsamic vinegar, honey, and soy sauce creates a savory-sweet glaze that coats the tender chicken and carrots perfectly. Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 pound baby carrots
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In the slow cookers bottom, put chicken breasts

On top of the chicken, put sliced onion, baby carrots, and minced garlic

Honey, soy sauce, dried thyme, salt, and pepper should all be mixed together in a small bowl

Then, pour the mix over the slow-cooked chicken and vegetables

Set the timer for 6 to 8 hours on low or 3 to 4 hours on high

Cover and cook until the chicken is tender and cooked all the way through

Before serving, sprinkle with fresh parsley
