Gluten-Free Oatmeal PB Cookies
These oatmeal peanut butter cookies dont have any gluten and are soft and chewy. They are also full of healthy ingredients. Theyre great for people who cant have gluten or who want a healthier cookie option.
Ingredients:
- 1 cup gluten-free rolled oats
- 1/2 cup natural peanut butter
- 1/4 cup honey or maple syrup
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- Pinch of salt
- Optional: 1/4 cup chocolate chips or chopped nuts
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, egg, vanilla extract, baking soda, and salt
Mix well until fully combined
If desired, fold in chocolate chips or chopped nuts into the dough
Scoop dough using a tablespoon and place onto the prepared baking sheet, spacing them apart
Use a fork to gently flatten each cookie and create a crisscross pattern on top
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
