Creamy Tortellini Soup
This Creamy Tortellini Soup is a comforting and satisfying dish perfect for chilly nights. The combination of tender tortellini, creamy broth, and flavorful herbs creates a delicious soup thats sure to please.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 14
- 5 oz can diced tomatoes
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1 9 oz package refrigerated tortellini
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
For about three to four minutes, until the onion is clear, add the diced onion
After you add the garlic, cook for another minute or two
Add heavy cream, diced tomatoes, basil, oregano, salt, and pepper, and mix well
Let it cook for 10 minutes after you bring the mix to a simmer
Follow the directions on the package for cooking the tortellini, which is usually between 5 and 7 minutes
Toss in the fresh spinach and cook for about one to two minutes, until it wilts
Grate some Parmesan cheese and stir it in until it melts and becomes creamy
If you want, you can top the hot dish with extra Parmesan cheese
