Cilantro Lime Chicken and Rice
A zesty and flavorful dish featuring tender chicken breasts cooked with fragrant cilantro, tangy lime juice, and aromatic garlic, served over a bed of fluffy rice cooked in chicken broth.
Ingredients:
- 4 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1/4 cup lime juice
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
In a large skillet, brown chicken breasts over medium heat until cooked through, about 5-7 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add rice, chicken broth, lime juice, cilantro, garlic, cumin, salt, and pepper
Bring mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed
Return chicken to skillet, cover, and cook for an additional 5 minutes to heat through
Serve hot, garnished with extra cilantro and lime wedges if desired
